Pasta salads are quick and easy dishes to make in the summer when you want to stay away from the oven. We found a light and and fresh version of the average pasta salad that only takes 20 minutes to make you so you can spend the rest of your valuable time with your family and friends!

Here’s what you need:

  • 2 cups uncooked whole wheat penne pasta
  • 1 cup spinach
  • ½ cup swiss cheese
  • ¼ cup dry coppa
  • ¼ cup dry salami
  • 1 medium tomato
  • 3 tablespoon red onion
  • 1 tablespoon lemon juice
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoonchoppedbasil
  • 1 tablespoonchoppedparsley
  • ¼ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • ⅛ teaspoon salt

All you have to do is cook the pasta (takes about 8 minutes) and toss all the ingredients together, and mix well.
